I know what you mean - we are dealing with a similar challenge with
the Joomla CMS and the Moodle LMS.
At least there are animated and visual tutorials available at
www.joomla.org.za under Training.
For Moodle, there is a decent "How to Moodle" course at www.moodler.co.za.
For Linux resources, try these two sites;

JavaBean : http://JumpingBean.co.za/
Perhaps Linux needs a local training and support centre, funded by
FLOSSWorld, on the initiative of a group like the GLUG. Anyone
interested?
